“We thoroughly studied and searched for quality plant alternatives that provide the same aroma, texture and flavor to replace the meat,” says Executive Chef Meik Brammer. They challenge the popular “meaty” dishes such as Bicol Express, Sisig and Bacolod Inasal to an all-vegetable makeover. Substituting the pork in Bicol Express with a variety of mushrooms such as portabello, shitake and Tagaytay’s oyster mushroom is a creative feat. Mushrooms already are rich and meaty textured perfect to combine with their homemade spicy coconut cream. Sisig, on the other hand, turned into a hearty fare by using banana hearts (puso ng saging) and breadfruit (kamansi). These are tasteful ingredients and can easily be mistaken as pork with eyes closed. For Bacolod Inasal, they char-grilled the high-protein alternative tofu to be dipped in traditional Iloilo vinegar, sinamak.  

What makes them go vegan? The hotel got inspired by the growing vegan or plant-based eating community in the country. It’s a culinary treat catering to various, if not all, cravings such as foodies, vegans, healthy seekers and any appetite who’s up for something new.

Cru Steakhouse is located at Marriott Hotel Manila’s G/F and is open from 6pm to 10:30 pm on Sundays to Thursdays and 6pm to 11:30pm on Fridays and Saturdays.
